  • Couscous 500 grams
  • Turmeric 2 teaspoons
  • Vegetable stock cube 1 pc
  • Cinnamon 1 teaspoon (ground)
  • Apricot 100 grams (dried and chopped)
  • Red onion 3 pcs (thinly sliced)
  • Caster sugar 1 teaspoon
  • Vegetable or sunflower oil 500 ml
  • Lemon 1 pc (zest and juiced)
  • Olive oil 2 tablespoons
  • Coriander small bunch (chopped)
  • Mint small handful (chopped)

How to Make 

  1. Start with boiling water in kettle.
  2. Tip the couscous into a large bowl with turmeric, cinnamon, apricot, and do not forget the stock cube. Season it, as you like. Pour over about 500 ml hot water on the bowl and start stirring it lightly. Cover the bowl with cling wrap for about 5 minutes.
  3. Divide half of the sliced onion and put it inside of the bowl. Pinch a salt and pour the hot water on the bowl.
  4. Prepare your saucepan and heat the oil. Fry the rest of the sliced onion.
  5. Drain the onion, which you have poured with hot water, drain the couscous too. Mix those two and do not forget to add zest lemon, and the entire herb you have prepared. Serve it with adding fried onion on top of it .

2. Moroccan Vegetarian Couscous Recipe. 

If you prefer to eat all vegetarian food, then this Moroccan vegetarian couscous recipe is what you need to prepare. For preparing this couscous recipe, you must prepare the entire ingredients like (2 servings):

  • Almond 1/3 cup (sliced)
  • Olive oil 1 tablespoon
  • Mixed vegetable 3 cups (onion, cauliflower, carrot, etc)
  • Cumin 1 ½ teaspoons (ground)
  • Coriander 1 ½ teaspoons (ground)
  • Dry white wine 1 cup
  • Golden raisin 1/3 cup
  • Vegetable broth ¾ cup
  • Couscous 7 ounces

How to Make 

  1. Grab your skillet and start stirring the almond on it for about 4 minutes.
  2. Transfer the almond on a big bowl.
  3. Add oil to your skillet and start cooking the vegetable with cumin and coriander. Cook until the vegetable is soft enough.
  4. Add dry white wine to the vegetable, and boil it.
  5. Add broth and then cover the skillet partially.

  • Couscous 200 grams
  • Hot vegetable stock 270 ml
  • Tomato 4 pcs (chopped)
  • Sweet corn 340 grams (drained)
  • Cucumber ¼ pc (chopped)
  • Red onion 1 small size (finely chopped)
  • Apricot 6 pcs (dried and chopped)
  • Olive oil 2 tablespoons
  • Lemon ½ pc (juiced)
  • Parsley 3 tablespoons (chopped)

How to Make 

  1. Put the entire couscous on a big bowl. Add vegetable stock. Cover and leave that mixture for about 10 minutes.
